Hummus.. the way I make it.

(1) 1 part  Garbnazo beans well cooked,

(2) 1/3 part yellow peas cooked,

(3)1/4 part Seasame seeds, toasted cooked or raw,

(4) 1/3 part good water, olive/canola oil  and lime juice.

(5) Spices of choice, salt or optional spices. (suggestions are welcome)

Blend all with quality virgin olive oil, herbs, lime juice and bit of salt into a smooth paste.

Let stand, refridgrate and then enjoy as dip, as base for salad dressing, or food rub.

You can create varieties with Hummus.

You can blend crushed olives or green peas, green pepper, yellow pepers, red peppers, etc., add fresh herbs like basil and parsely.

It is an excellent complete food, can be placed in Pitta bread , used as dip with chips, or rolled with vegies in burrito type bread.

If you eat meat, it is an excellent tenderizer and a good rub.

This is a high grade micro biotic and micro scrubber. Have fun managing your weight.!

Finally my local supermarket began to carry  Organic Garbanzo beans and I was able to try the posted Hummas recipe.

I actually cooked the beans in the microwave for several minutes to soften before mashing. I enjoyed the taste both warm & chilled. Ingredients: (1) Garbanzo Beans (2) Olive Oil (3) Water (4) Seasoning: to taste (me personally: garlic, sea salt, fresh ground pepper, natures seasoning = basic flavoring) (5)Partial can diced tomatoes & chiles. I like the extra hot. (6) Garnished with walnuts & small amount of feta. I had no idea hummas could be so diverse! I have enjoyed the new "healthy / tasty" addition to my diet. dZ

 

Very nice.. New texture and variation. Dont forget adding cooked yellow split peas. Lime juice is really important to replace as much salt as possible. Send pictures. Masso

 

 

Bread .. Recpies below the picture; 

 

  

If you are like me and eat bread daily, making your own bread makes lots of sense.

While giving us control of ingredients on some complex food form we may purchase,

will also enable to add own special ingredients and work the recipe around.  

Bread is an essential food and it can be a good medium for ingesting daily dose of

basic needed supplements.

 

For example , it is known that if you are a male over 50 and need to have your

prostate under control, adding pumpkin seeds to your daily diet can help. 

Green pepper seeds for ovarian health. Some other fruit seeds/nuts for different benefits.

Several other supplements can also be added to bread to satisfy specific daily needs.

 

Keep in mind that; while your bread is being baked, heat from oven/bread maker 

can change or alter chemical properties. 

So proceed with caution and be informed.

 

You can choose veriety of methods like ovens and bread-makers to bake bread.

I use a consumer size bread machine to make mine.

Following recepies are for bread machines and will work perfectly with other methods.

You can use the dough for other breads like for pizza and types of muffins. 

 

Here are recipe(s) I have practiced for years and a very special, giving, creative,

beautiful gentle soul finally help me put it in writing.

Lets make the best bread ever...!

My recommendations and variation are followed under each ingredients;

Bread consists of two separate ingredients; Dry ingredients and liquids.

You will have a successful bread if you do not exceed maximum recommended

measurements.

 This will make approximately a 1.1/2 lbs bread. 

 

4 - 4 1/2 cups flour including all dry ingredients.

Your dry ingredients must not be more than half full of your bread machine container,

usually 4 cups.

You can replace one or more cups with Rye or other grains and brans.

 

1/4 cup oil.

Olive, canola, saffola, grape-seed oil, added flax seed oil, sesame seed oil, etc.

You can reduce this amount if you add fruits or gelatins.

 

2 1/2 tsp. salt.

Sea salt, iodized salt, light salt. Coarse is preferred.

You can reduce or avoid salts if you prefer sweet breads for health reason.

 

1/3 sugar..

Fruit sugars, whole fruits

I prefer, unwashed organic, fruit sugars and whole ripe fruits specially ones

that are sweeter like peach.

Sugars help activate yeast.

 

1 tbs dry yeast.

There are different opinions regarding yeast and leavened bread, most are negative.

Some prefer wild, natural yeast cultures, try to avoid store bought yeasts, some

prefer beer.

I am tempted to try live Kambucha and appreciate any knowledge on that.

Yeast is to leaven and create the structure of bread via organic degassing.

 

1/3 cup Glutton.

Opinions about glutton is also mostly negative.

Glutton will advance gl index of ingredients to higher level and can be allergenic.

If you can help with other methods like sea green jells , fruits, kelps etc..then

you can avoid or reduce Glutton. Adding fruits can help.

Gluton helps bread rise more effectively while gluing

the bread preventing it from falling apart. Reduces bread crumbs.

 

2.1/2 cups Liquids.

This is limit for this recipe.. maximum total liquid added.

Milk, fruit juices, vegetable juices, coconut juice, water..

Juices in fruits you may add are considered fluids.

 Your bread may be too moist if you add more than required.

 

Other ingredients;

As earlier mentioned, you can modify or add dry or liquid portions

to create your own breads.

You can add oatmeal, bran, black sesame seeds, Alfa alfa, sunflower seeds..

Some fruits or roots can add special ingredients like fibers and

color to your bread as well.

Ripe peaches/nectarines lighten up breads, apricots can add pleasant yellow color.

Beets can produce red bread as well as adding micro-fiber..!

Onions, garlic breads, olives can add Mediterranean flavor, herbs, etc...

Sweet fruit breads using dried fruits like plums and raisins etc..and when making dough

for muffins.

 

Health supplements can be added to acheive special effects.

Daily consumption of pumpkin seeds for prostate, Green pepper seed for ovarian health,

Physilium and flax seeds are known to help digestive system and reduce cholestrol.
